LIQUID CONFETTI

This gently sparkling elixir is fresh, dry, wild and bold! The pears offer a good dose of drying tannins, astringency and crispy acidity; the apples bring in a rounded richness and full mouthfeel. Try with a mild blue or alpine cheese.

75% Yellow Huffcap perry pears, 25% Golden Russet apples; non-certified organically grown from Harmony Orchards in Tieton, WA

Maceration: None 

Fermentation: Spontaneous

Additives: 50 ppm S02 at pressing for pears

EVERYTHING IS MOOD

This bottle of plum cider is cooler than a cucumber in a bowl of hot sauce. Golden plums add a zip o' zing to keep you engaged until adequate hydration sets in. The never-ending stream of natural carbonation lends the perfect prickle to get you up and going. When the goin' gets easy the easy get goin'. It's all good.

75% Gravenstein apples, certified organic from Mendocino County, CA and 25% Golden Plums; dry farmed/unsprayed from Los Osos, CA

Hmmm, is it a piquette, co-ferment or fruit wine? All of the above? We have no clue actually. Though it has been confirmed to be a refreshing thirst-quencher. And don't overthink this one. It's easy to look at and fun to gulp. Sort of like a mash-up between tutti frutti and fruity pebbles. With just a touch of tannins to keep you coming back for more. These apples and grapes were both at their point of exaltation during bottling. So this juice will absolutely neutralize all negative energies in your aura. 37% organic Gala apples, 33% organic Gravenstein apples, 30% Golden Delicious apples and Grenache Noir grape pomace.

Maceration: Fermenting apple juice spent 9 days on pressed whole cluster grapes

INVITE THE NIGHT

A light Red/dark Rose "pizza + oysters pet-nat" from biodynamically grown Grenache Noir grapes. You know, grown following Rudy Steiner's principles of burying alpaca dung overwinter in a horn from a lactating cow then vortexing into a tea come spring to spray across the land. Yup, the fruit in this bottle was watched over by gnomes and fairies. It's hella fresh as the kids say. Shout-out to Bubble E. Fresh & the Get Fresh Crew.

100% Grenache Noir biodynamically grown by Ryan Roark at Demetria Vineyards in Los Olivos, CA within the Santa Ynez AVA. 

Maceration: 48 hour, foot stomped whole cluster.

Fermentation: Spontaneous 

Vessel: Heavyweight Polyethylene

Additives: None

Carbonation: Petillant Naturel (bottled 10/19/19, disgorged 1/5/21)

BLUMP BLOOMP BLIMP

There are only 25 blimps in the whole entire world. There are only 18 cases of this cider in the entire world. That should put things in perspective. This drank squashes free radicals with ease. If it were a blimp they might call it Berries Galore. It's basically a liquid fruit stick without the corn syrup. Strawberries hit hard up front on the nose. The blackberries come and go as they please. Color is stunning. Bubbles are tiny and cute. But in the end this is straight blueberry delight. It’s a for sure right on!

Cider from certified organic Gala, Fuji and Newtown Pippin apples rested for 33 days on no-spray Blueberries (Emerald, Jewel and Spring High), Thornless Blackberries and Albion Strawberries.

Maceration: 33 days on berries

Fermentation: Spontaneous 

Vessel: Stainless Steel Tank and Heavyweight Polyethylene

Additives: Sugar for carbonation, 10 ppm sulphur added at pressing of Gala/Fuji apples. 

Carbonation: Bottle conditioned with U.S. grown organic cane sugar

Cider from certified organic Gala, Fuji and Newtown Pippin apples rested for 33 days on urban foraged Loquats and no-spray, u-pick Apricots.

Maceration: 33 days on whole fruit

Fermentation: Spontaneous 

Vessel: Stainless Steel Tank and Heavyweight Polyethylene

Additives: Sugar for carbonation, 10 ppm sulphur added at pressing of Gala/Fuji apples. 

Carbonation: Bottle conditioned with U.S. grown organic cane sugar

A TRIBE CALLED QUINCE

To my tribe that flows in layers. Take a sip, tilt your head and squint then this blend of three pome fruits becomes a deliquescent fruit salad. It will send your tastebuds rushing to the dance floor like it's your first post-pandemic live show. Pairs real well with the last Thursday in November.  

46% Porter's Perfection apples, non-certified organically grown from Harmony Orchards in Tieton, WA.

6% Yellow Huffcap pears, non-certified organically grown from Harmony Orchards in Tieton, WA.

2% Pineapple quince, non-certified organically grown from Majestic Ranch in Cayucos, CA.

Maceration: Quince – 7 days

Fermentation: Spontaneous (Fermented separately, blended 2 days before bottling)

Vessel: Apples - Heavyweight Polyethylene, Pears/Quince – Glass Demijohn

Additives: 50 ppm S02 added to just the pears at pressing (Unfined, Unfiltered)

Carbonation: Perlant (slightly sparkling) via Ancestral Method
